There’s an undeniable magic in stepping away from routine, whether it’s for a joyous family celebration or simply a much-needed mental break. The past few weeks have been a whirlwind of activity, often leaving me feeling a bit wound up despite various “breaks.” It’s a curious paradox: the anticipation and preparation for a respite can be just as demanding as the daily grind itself. Yet, here we are, celebrating a cousin’s wedding, which means an excuse to dance, laugh, and perhaps indulge a little more than usual. Coming off an amazing weekend, transitioning back into a work week can feel like a gravity-defying feat. So, I find myself immensely proud to have reached this point, and even more so, to be sharing something truly special with you this week.

Discovering the Unexpected: Herbs in Desserts

Speaking of sharing something special, cast your eyes upon this incredible ice cream! Those alluring pink speckles are just a visual hint of the truly sensational flavor experience that awaits. You might already know that for me, ice cream is often the ultimate comfort, especially when sleep proves elusive. With bouts of insomnia making a strong comeback this week, creating something soothing and satisfying for both mind and body became a priority. But I didn’t want just any lemon raspberry treat – while I adore classics like these delightful cupcakes, I craved an “extra” dimension, a unique twist to elevate the familiar.

That “something extra” serendipitously arrived in the form of basil paste from Gourmet Garden. Now, I can almost hear the questions forming: “Basil in ice cream, Meghan? Are you serious? Have you gone mad?” And to that, I proudly declare, “Yes, just crazy enough, folks!” The culinary scene, particularly in vibrant food cities like Denver, has been buzzing with innovative ice cream parlors fearlessly experimenting with fresh herbs and unconventional ingredients like miso paste. If they can push the boundaries of flavor, why can’t we bring that adventurous spirit into our home kitchens?

The Birth of Lemon Raspberry Basil Ice Cream

This spirit of experimentation led directly to the creation of this very Lemon Raspberry Basil Ice Cream. My goal wasn’t merely to infuse the ice cream base with a subtle hint of basil; I wanted the basil flavor to truly shine, to playfully dance with the tartness of the raspberry. To achieve this, I decided against simply tossing in fresh basil leaves. Instead, I crafted a vibrant raspberry basil compote, utilizing the potent Gourmet Garden basil paste. This concentrated paste was key to delivering the bold, distinct basil punch I envisioned, without needing an excessive amount of fresh leaves that might alter the texture or require a lengthy infusion process. The compote would then be swirled into the ice cream during the final moments of churning, ensuring bursts of intense flavor with every spoonful.

Why Basil Works Wonders in Sweet Treats

The concept of basil in dessert might initially sound unconventional, but its aromatic, slightly peppery, and subtly sweet undertones make it a surprisingly brilliant companion to fruits, especially berries and citrus. Think about how a fresh caprese salad can brighten a meal; basil brings a similar refreshing lift to sweet dishes. When paired with the bright, zesty notes of lemon and the sweet-tart intensity of raspberries, basil transforms from a savory staple into a sophisticated dessert ingredient. It cuts through the richness of the cream, adding an unexpected layer of complexity that keeps your palate intrigued. The result is a truly memorable dessert: a delightful punch of basil perfectly balanced by the creamy lemon ice cream and the vibrant tartness of the raspberries.

Crafting the Perfect Custard Base

The foundation of any exceptional ice cream is its custard base. Achieving that velvety smooth, rich texture requires a bit of patience and attention to detail. Our lemon ice cream base starts with a classic combination of heavy cream and whole milk, warmed gently with a touch of sugar and a pinch of salt. The secret to its luxurious consistency lies in tempering the egg yolks. This process involves slowly incorporating a small amount of the hot milk mixture into the whisked eggs and sugar, gradually bringing the egg mixture up to temperature before adding it back to the saucepan. This prevents the eggs from scrambling, ensuring a silky-smooth custard. Once thickened to coat the back of a spoon, the vanilla extract and fresh lemon juice are stirred in, providing that bright, zesty counterpoint. Proper chilling of the custard is crucial—it needs to be thoroughly cold before churning to achieve the best texture. Covering the surface directly with plastic wrap prevents a skin from forming, ensuring maximum creaminess.

The Raspberry Basil Compote: A Flavorful Swirl

While the lemon custard base is chilling, the raspberry basil compote comes together with remarkable ease. Fresh raspberries and sugar are simmered gently until the berries break down into a smooth, luscious sauce. It’s at this point that the Gourmet Garden basil paste is introduced. Unlike fresh basil, which might require steeping and straining, the paste seamlessly blends into the compote, imparting its concentrated flavor without any fibrous bits. This ensures a uniform, intense basil presence that truly “pops” against the fruit. Cooling the compote completely before swirling it into the ice cream is vital to prevent it from melting the churned ice cream. The visual appeal of the vibrant pink compote swirled through the pale yellow ice cream is almost as captivating as its taste, with each swirl offering a burst of sweet, tart, and herbaceous delight.

Ingredients

Raspberry Basil Compote

  • 1 cup raspberries
  • 2 1/2 Tbsp sugar
  • 1 tsp Gourmet Garden Basil Paste

Lemon Ice Cream

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/4 cup + 1 Tbsp granulated sugar
  • Pinch of salt
  • 7 egg yolks
  • 3/4 tsp vanilla extract
  • 1/4 cup + 1 Tbsp lemon juice
  • 1/2 cup white chocolate chips

Instructions

  1. In a small saucepan over medium-high heat, combine raspberries and sugar. Cook, stirring occasionally, until the raspberries break apart and form a smooth sauce, which should take approximately 4 to 5 minutes. Remove from heat and stir in the Gourmet Garden Basil Paste. Allow the compote to cool completely.
  2. In a medium saucepan, combine the milk, heavy cream, 1 tablespoon of sugar, and a pinch of salt. Cook over medium heat, stirring occasionally, until the mixture just comes to a boil.
  3. In a separate medium bowl, whisk together the egg yolks and the remaining 1/4 cup sugar until well combined and slightly pale. Slowly temper the egg mixture by gradually adding about 1/2 cup of the hot milk mixture to the eggs, whisking continuously. Continue adding the hot milk mixture, 1/4 cup at a time, until all of it has been incorporated into the egg mixture. Transfer the entire mixture back to the saucepan.
  4. Cook the custard over medium-low heat, stirring constantly with a wooden spoon or spatula, until the mixture thickens sufficiently to coat the back of the spoon. Do not allow it to boil. Remove from heat immediately and stir in the vanilla extract and lemon juice. Pour the custard into a large bowl and cover it with plastic wrap, ensuring the wrap touches the surface of the custard to prevent a film from forming. Chill the custard completely in the refrigerator for at least 4 hours, or preferably overnight.
  5. Once the custard is thoroughly chilled, pour it into your ice cream maker and churn according to the manufacturer’s instructions. During the last few minutes of churning, gently stir in the cooled raspberry basil compote. Once churned to a soft-serve consistency, transfer the ice cream to an airtight container. Top with white chocolate chips (if using) and chill in the freezer for a minimum of 6 to 8 hours to allow it to firm up before serving.
