  • 3/4 cup vegetable oil
  • 3 large eggs separated
  • 3/4 Tbsp vanilla
  • Red food coloring
  • 3/4 cup buttermilk
Chocolate Truffle Frosting

  • 2 3/4 cup confectioners’ sugar
  • 1/2 cup unsweetened cocoa powder
  • 3 oz dark chocolate melted
  • 7 Tbsp unsalted butter softened
  • 6 Tbsp heavy whipping cream
  • 1 tsp vanilla extract
  • Garnish: homemade chocolate truffles

  • Preheat oven to 350 degrees. Prepare three 4-inch round cake pans by greasing and flouring them, or lining with parchment paper circles.
  • In a large bowl, whisk together the dry ingredients: Sprouts all-purpose flour, Sprouts baking soda, Sprouts unsweetened cocoa powder, and a pinch of salt. Set this mixture aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the softened unsalted butter for the cake until it is light and creamy. Gradually add the Sprouts granulated sugar and continue to beat for approximately 2 minutes until the mixture is fluffy. Incorporate the vegetable oil, beating for another 2 minutes. Add the separated egg yolks and vanilla extract, mixing until just combined and smooth.
  • Stir in the red food coloring, starting with 1 tsp, until fully combined. Continue to add more food coloring, a little at a time (I used 2 to 3 tsp total), until the batter achieves a deep, vibrant red hue.
  • With the mixer on low speed, alternate adding the dry ingredient mixture and the buttermilk to the wet ingredients in three separate additions, beginning and ending with the dry ingredients. Mix only until each addition is just incorporated, being careful not to overmix.
  • In a separate clean, small bowl, whisk the egg whites until they form thick and foamy peaks. Gently fold these whisked egg whites into the cake batter until no streaks remain, creating a lighter, airier texture.
  • Divide the prepared red velvet cake batter evenly among the three 4-inch round cake pans, filling each approximately 2/3 of the way full to allow for rising.
  • Bake in the preheated oven for 30 to 40 minutes, or until a wooden toothpick inserted into the center of a cake comes out clean.
