  • 1/3 cup brown sugar
  • 2 1/2 agave
  • 1 large egg
  • 1 cup buttermilk
  • 2 1/2 jalapeños seeded and chopped
  • 3 slices bacon cooked and chopped
  • 1/3 cup Bonne Maman Wild Blueberry Preserves

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with parchment cupcake liners, ensuring they are properly seated for easy removal.
  • In a large mixing bowl, thoroughly whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and a pinch of salt. This ensures all dry ingredients are well combined and distributed.
  • In a separate medium bowl, whisk together the melted and cooled unsalted butter, canola oil, brown sugar, and agave until smooth. Add the large egg, whisking vigorously until fully incorporated. Finally, gently whisk in the buttermilk until the mixture is just combined, being careful not to overmix.
  • Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. The batter should be slightly lumpy; avoid overmixing to ensure tender muffins.
