Ingredients

Roasted Vegetables

  • 1 cup grape tomatoes
  • 1 tsp olive oil
  • 1 zucchini cut into sticks (approx. 1/2-inch wide x 2 to 3 inches long)
  • 1 yellow squash cut into sticks (approx. 1/2-inch wide x 2 to 3 inches long)
  • Salt and pepper to taste
Raw Vegetables

  • 1 green bell pepper sliced into strips or rings
  • 1 orange bell pepper sliced into strips or rings
  • 1/2 cup raw cherry tomatoes
  • 1 cucumber cut into 1/4-inch rounds
Hummus & Dippers

  • Sabra Roasted Pine Nut Hummus or your preferred flavor
  • Sabra Roasted Red Pepper Hummus or another complementary flavor
  • Your favorite pita cut into wedges, ideal for dipping

Instructions

  • Preheat your oven to 400 degrees F (200 degrees C). This ensures the oven is at the correct temperature for even roasting.
  • In a large mixing bowl, combine the grape tomatoes, zucchini sticks, and yellow squash sticks. Drizzle them with 1 teaspoon of olive oil and toss gently to ensure all the vegetables are evenly coated. A light coating of oil helps them roast beautifully and prevents sticking.
  • Spread the olive-oil coated vegetables in a single layer on a rimmed baking sheet. For best results and easy cleanup, line your baking sheet with a silicone mat or aluminum foil. Season generously with salt and freshly ground black pepper to enhance their natural flavors.
  • Bake the vegetables for approximately 20 minutes, or until the squash and zucchini are tender when pierced with a fork. The grape tomatoes should appear slightly wrinkled and softened, but not entirely burst, retaining some of their juicy integrity.
  • Once the roasted vegetables are slightly cooled, it’s time for assembly! Artfully arrange the warm roasted vegetables, the crisp raw vegetables, pita wedges, and the two delicious Sabra hummus flavors onto a large platter or cutting board.
