Embracing the Flavors of Fall and Football Season
As the days grow shorter and the air turns crisp, there’s an undeniable excitement that fills the atmosphere with the arrival of fall. While the lazy, hazy days of summer hold their own charm, autumn truly speaks to my soul. It’s a season defined by vibrant foliage, comforting squash dishes, and, most importantly, the exhilarating start of football season and all the tailgating festivities that come with it.
There’s nothing quite like the communal spirit of gathering with friends and family to cheer on your favorite team, whether you’re at the stadium or hosting a watch party at home. My appreciation for football, and especially tailgating, has grown immensely since I played my first official season of fantasy football (and totally dominated, might I add!) and experienced my first live NFL game. The energy, the camaraderie, and of course, the incredible food are all part of the magic.
With a new house to settle into just as football season kicks off, I envision countless “house-gating” parties filled with laughter, good company, and a spread of fantastic, yet simple, dishes. The key to successful entertaining is having a collection of crowd-pleasing recipes that don’t require you to spend hours in the kitchen, allowing you to actually enjoy the game and your guests. That’s where these epic Hatch Green Chile Chicken Sliders come in – a recipe so easy and flavorful, it’s destined to become a staple in your game day rotation.

The Magic of Hatch Green Chiles: A Flavor Sensation
At the heart of these incredible sliders is one of my absolute favorite ingredients: Hatch Green Chile Salsa. For those unfamiliar, Hatch green chiles are a culinary treasure, primarily grown in the Hatch Valley of New Mexico. However, their popularity has spread, and they are particularly cherished here in Colorado for their distinctive flavor profile. These chiles offer a smoky, earthy taste with a heat level that can range from mild to extra hot, providing a nuanced spiciness that’s far more complex than just a fiery kick.
I was absolutely thrilled when I discovered Sprouts’ Hatch Green Chile Salsa on the shelves of my local store. Sprouts truly captures the authentic essence of these beloved chiles, bottling that rich, bold flavor into a convenient salsa form. The balance of spice and depth in their salsa is so spot-on, it makes it the ideal base for slow-cooking chicken. The beauty of using a slow cooker is that it allows the chicken to absorb all those incredible Hatch green chile flavors, resulting in incredibly tender, juicy pulled chicken with just the right amount of heat.
Assembling Your Perfect Game Day Sliders
The magic doesn’t stop with the perfectly cooked chicken. These Hatch Green Chile Chicken Sliders are all about building layers of flavor and texture. Once your chicken is wonderfully tender and shredded, it’s time to assemble these mini masterpieces. We pile the flavorful chicken onto soft slider buns, then top it with slices of zesty pepper jack cheese. A quick trip under the broiler melts the cheese to gooey perfection, adding another layer of spicy creaminess that complements the chicken beautifully.
But wait, there’s more! To elevate these sliders from great to absolutely unforgettable, we add a sprinkle of crispy fried onions for a satisfying crunch and a few extra slices of fresh jalapeños for an additional kick of heat and a vibrant touch. A final drizzle of extra Hatch Green Chile Salsa, if desired, ensures every bite is bursting with that signature smoky, spicy goodness. It’s a harmonious blend of tender, cheesy, crunchy, and spicy that will have everyone reaching for a second, or even third, slider!
Why These Sliders Are a Must-Make for Any Occasion
Beyond their incredible taste, these Hatch Green Chile Chicken Sliders are incredibly easy to make, which is a huge win for anyone hosting a party or simply looking for a delicious weeknight meal. The slow cooker does most of the heavy lifting, allowing you to focus on other things while the chicken simmers to perfection. This means you won’t be stuck in the kitchen and will have plenty of time to enjoy the tailgating fun and won’t miss a single minute of the game!
They are also incredibly versatile. While perfect for football season, these spicy chicken sliders are fantastic for any casual get-together, family dinner, or even as a hearty snack. Serve them alongside a simple coleslaw, potato salad, or a bowl of chips and guacamole for a complete and satisfying meal. For a refreshing beverage pairing, a cold craft beer or a zesty lemonade would be excellent choices to balance the heat.
If you’re looking to mix things up, consider adding a sprinkle of fresh cilantro for a burst of freshness, or even a dollop of sour cream or crema to cool down the spice just a touch. Experiment with different cheeses if pepper jack isn’t your favorite – a sharp cheddar or even a mild Monterey Jack would also be delicious. No matter how you customize them, these Hatch Green Chile Chicken Sliders are guaranteed to be a hit and leave everyone craving more.

Hatch Green Chile Chicken Sliders
Ingredients
- 3 lbs boneless, skinless chicken breasts
- 1 jalapeño seeded and diced
- 2 1/2 cups Hatch Green Chile Salsa
- 1/4 cup chicken stock
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 10 slider buns halved and toasted
- 1/3 cup fried onions
- 3 oz pepper jack cheese sliced
- Sliced jalapeños for garnish, optional
Instructions
-
Prepare the Chicken: Add chicken breasts, diced jalapeño, 2 cups of Hatch Green Chile Salsa, chicken stock, cayenne pepper, and salt to a slow cooker. Cook on high for 3 to 4 hours, or until the chicken is easily shreddable. (Alternatively, you can use an Instant Pot on high pressure for 15-20 minutes with natural release).
-
Shred the Chicken: Carefully remove the cooked chicken from the slow cooker to a large bowl. Using two forks, shred the chicken thoroughly. Stir in the remaining 1/2 cup of Hatch Green Chile Salsa to infuse even more flavor.
-
Assemble the Bases: Preheat your broiler. Arrange the bottom halves of the slider buns on a sheet pan. Evenly distribute about 1/3 cup of the green chile chicken mixture onto each bun, then top with a slice of pepper jack cheese.
-
Melt the Cheese: Place the sheet pan under the broiler set to high. Broil for approximately 1 to 2 minutes, or until the cheese is perfectly melted and bubbly. Watch carefully to prevent burning.
-
Finish and Serve: Remove the sheet pan from the broiler. Top each slider with crispy fried onions, additional sliced jalapeños (if desired), and a touch more Hatch Green Chile Salsa for an extra kick. Place the top halves of the slider buns on top.
-
Enjoy: Serve your delicious Hatch Green Chile Chicken Sliders immediately and watch them disappear!
