- 1 small yellow squash, chopped
- 2 medium tomatoes, deseeded and chopped
- 1 bay leaf
- 1/2 cup fresh basil, chopped
- 1/2 tsp crushed red pepper
- 1/2 tsp coarse salt
- 1/2 tsp black pepper
- 1 tsp balsamic vinegar
SOFT SCRAMBLED EGGS
- 5 large eggs
- 2 Tbsp unsalted butter
- Salt and pepper, to taste
- Freshly grated Parmesan cheese, for garnish (optional)
Instructions
- Add 1 Tbsp of olive oil to a large skillet over medium-high heat. Once the oil is hot and shimmering, add the chopped onion and minced garlic. Sauté, stirring occasionally, until the onions are softened and translucent, which should take about 5 minutes.
- Stir in the chopped eggplant. Continue to cook for approximately 5 minutes, allowing the eggplant to become almost tender and slightly browned.
- Add the chopped zucchini and yellow squash to the skillet. Cook for another 5 minutes, stirring to ensure all vegetables are cooking evenly. They should still retain a slight bite.
- Now, stir in the deseeded and chopped tomatoes, bay leaf, fresh chopped basil, crushed red pepper, coarse salt, and black pepper. Finish by drizzling in the balsamic vinegar.
- Cook the mixture for a final 5 minutes, allowing the flavors to meld and the tomatoes to soften slightly. Remove the skillet from the heat, cover it, and set aside to keep the ratatouille warm while you prepare the eggs.
- For the soft scrambled eggs, crack the 5 large eggs directly into a small nonstick pan without pre-beating or seasoning them. Add the unsalted butter to the pan. Place the pan over medium heat.
- Using a rubber spatula, constantly stir the eggs from the moment they hit the pan, breaking the yolks apart as you go. Once the eggs begin to set around the edges, remove the pan from the heat and continue stirring for about 20 seconds to prevent overcooking.
- Return the pan to the heat and continue to stir, scraping the bottom and sides of the pan for another 90 seconds.
