Our First Stop: The Irresistible Charm of Italian Cuisine
So, which magnificent cuisine did I choose to kick off this grand adventure? Naturally, it had to be ITALIAN! Perhaps it feels a bit like cheating, given my cherished memories of time spent in Rome and my undeniable obsession with pasta. However, Italian cuisine offers such a perfect blend of simplicity, profound flavor, and foundational cooking techniques that it makes an ideal starting point for mastering global cooking. It’s a cuisine that, while familiar, still holds endless opportunities for discovery, especially for classic recipes I haven’t yet tackled myself.
But wait, I haven’t even told you one of the most exciting elements of this series! For each cuisine we explore, I’m incredibly fortunate to feature an insightful interview with a fabulous expert food blogger. Their wisdom and passion will be invaluable, helping all of us (and by “us,” I definitely mean ME, too!) truly understand what makes each specific cuisine so incredibly special and how to approach it with confidence.

An Exclusive Interview with Paula from bell’alimento: Your Guide to Italian Flavors
To kick things off, please tell us a little about yourself and your blog:
Well, as you might guess from my blog, I absolutely adore cooking, though I confess, I have a strong aversion to doing dishes – a common chef’s dilemma! I am, without a doubt, a Nutella-holic, and if you meet me in person, you’ll quickly discover I’m quite the social butterfly – it’s notoriously difficult to get me to stop talking! On a slightly quirky note, I also have a strong dislike for making left-hand turns, which might be an interesting fact about my driving style. Most importantly, I have an unwavering passion for all things Italian. Yes, I am indeed fluent in Italian, a skill I’m very proud of. Growing up as an Air Force brat meant constantly traveling the country and the world, experiencing diverse cultures and cuisines firsthand, which undoubtedly fueled my culinary curiosity (Go Blue!). I met my wonderful husband in college, and together we’re raising three incredibly active and awesome kids who keep life exciting and full of delicious challenges!
How would you describe your cooking style?
My cooking style is fundamentally about being simple and satisfying. I believe that truly great food doesn’t need to be overly complicated or require a pantry full of obscure ingredients. It should be approachable, comforting, and most importantly, deeply satisfying to the palate. I focus on fresh, high-quality ingredients and straightforward techniques that allow the natural flavors to shine through, creating meals that bring joy and warmth to the table without unnecessary fuss.
I have been a long-time follower of your blog, and I would say you are definitely an expert in Italian cuisine. In your opinion, what is so special about Italian food?
What’s NOT to love about pasta? : ) But seriously, Italian food’s magic lies in its profound simplicity and its unwavering commitment to quality ingredients. It’s more than just a meal; it’s a celebration of fresh, local produce, olive oil, and passionate preparation. Each region boasts its own distinct specialties, showcasing a remarkable diversity from the hearty risottos of the North to the vibrant, tomato-rich dishes of the South. Italian cuisine isn’t just about the food; it’s about family, tradition, and the pure joy of sharing a meal. It’s comfort food at its finest, deeply rooted in history and love, making every dish a story and every bite a comforting embrace.
Do you think Italian cooking is difficult to master?
As with anything in life, practice makes perfect, and Italian cooking is no exception. However, I truly believe that food should always be fun and about nourishing yourself and the people you cherish. It’s not about achieving Michelin-star perfection every single time. The worst-case scenario is that you might burn something, and then you simply make a sandwich and try again! Don’t let the fear of failure stop you. Get in there, experiment with flavors, embrace the process, and give it a go! The beauty of Italian cooking, especially, is that many of its most iconic dishes are built on straightforward techniques that become second nature with a little hands-on experience.
Are there any secrets to help master Italian cooking?
The ultimate secret to mastering Italian cooking, without a doubt, is the use of quality ingredients. Italian cuisine thrives on fresh, vibrant produce, excellent olive oil, authentic cheeses, and flavorful meats. You can’t make a truly exceptional dish with subpar components. Invest in good San Marzano tomatoes, high-quality extra virgin olive oil, freshly grated Parmigiano-Reggiano or Pecorino Romano, and the best available fresh herbs. When your ingredients are top-notch, you need very little manipulation to create incredibly flavorful and authentic dishes. Let the ingredients speak for themselves!
I have to admit, I am having trouble narrowing down which recipes to highlight for the Italian section of this series – lasagna, gnocchi, tiramisu, ravioli, the list goes on and on! What are the top three dishes that you consider to be Italian staples?
That’s a tough one, as Italy truly has an endless array of incredible dishes! But if I absolutely had to narrow it down to the top three Italian staples, I would unequivocally choose Pasta, Risotto, and Pizza. These three categories represent the heart and soul of Italian cooking. Pasta, in its myriad shapes and sauces, is the ultimate comfort food and a canvas for endless creativity. Risotto, with its creamy texture and rich flavors, showcases the North’s sophisticated use of rice. And Pizza, in its truest form, is a perfect testament to simple, fresh ingredients creating culinary perfection. They are all globally recognized for a reason, embodying the very essence of Italian culinary tradition.
If you had to choose, what would be your ultimate full course Italian meal?
Oh, this is an easy one for me! My all-time, hands-down favorite dish is Spaghetti alla Carbonara. The rich, creamy sauce made with eggs, cheese, cured pork, and black pepper, clinging perfectly to al dente spaghetti, is simply divine. It’s pure comfort and culinary genius. To finish, I would absolutely top it off with a classic, perfectly balanced Tiramisu – its layers of coffee-soaked ladyfingers and mascarpone cream are the ideal sweet conclusion. And, of course, no ultimate Italian meal would be complete without a carefully selected, nice wine to complement and elevate every single bite.
Bringing Italian Authenticity Home: Crafting Spaghetti alla Carbonara
Well, after such a passionate endorsement, I simply had to take Paula up on her ultimate favorite dish recommendation! There’s something incredibly exciting about recreating an expert’s beloved meal. So, without further ado, I proudly present to you my attempt at Spaghetti alla Carbonara, directly inspired by Paula’s culinary wisdom!
My journey to crafting this classic Italian dish began with a slight challenge: tracking down traditional guanciale, the cured pork jowl that gives authentic Carbonara its distinctive flavor. It proved to be elusive in my usual stores. However, I’m fortunate enough to live close to a fantastic Italian market, run by an incredible group of folks who are true connoisseurs of Italian gastronomy. They were incredibly helpful, guiding me to a high-quality pancetta that, in their expert opinion, would yield an even better result than if I had managed to find guanciale. What a fantastic way to kick off a new dish, right? It just goes to show that adapting with quality alternatives can often lead to wonderful discoveries.
Next, I embarked on a quest to find the perfect recipe. I searched high and low, sifting through countless versions, before then I found this one on The Kitchn. What drew me to it was not just the clear instructions but also the vibrant discussion in the comments section, where passionate cooks debated what truly constitutes an authentic Spaghetti alla Carbonara. This collective wisdom and focus on traditional methods solidified my choice. I followed their guidance, and I can honestly say, the result was absolutely sublime. It was sooooo good, truly exceeding all expectations.
Luckily, I had a friend over when I first tested this Carbonara, and I am ecstatic to report that she went back for not just seconds, but thirds! Witnessing her enjoyment was incredibly rewarding and affirmed that this recipe is a definite keeper. The creamy, peppery, savory goodness truly hit all the right notes, proving that even with a slight adaptation on the cured pork, an authentic and delicious Carbonara is absolutely achievable at home.
This success with Spaghetti alla Carbonara has truly set a wonderful precedent for our “Mastering Global Cooking” series. Spaghetti alla Carbonara: Authentic Italian Comfort
Ingredients for Authentic Carbonara
- 1 pound dry spaghetti
- 4 fresh large eggs
- 8 ounces pancetta (or guanciale, if available) cut into squares
- 1/3 cup freshly grated Parmigiano-Reggiano
- 1/2 cup freshly grated Pecorino Romano
- Freshly cracked black pepper (generous amount)
- Sea salt (to taste, for pasta water)
Step-by-Step Carbonara Instructions

Fill a large pot with water and salt generously. Bring the water to a rolling boil, add the spaghetti, and cook for approximately 8 to 10 minutes or until it’s perfectly al dente. Before draining, reserve about 1/2 cup of the starchy pasta water; then, drain the pasta thoroughly.

While the spaghetti is cooking, heat a large skillet over medium heat. Add the pancetta (or guanciale) and sauté for about 2 minutes, or until the meat is wonderfully crispy and its fat has rendered. Remove the skillet from the heat, but leave the rendered fat in the pan.

In a separate small bowl, whisk together the fresh large eggs, Parmigiano-Reggiano, and Pecorino Romano until well combined and smooth. Season generously with freshly cracked black pepper.

Return the skillet with the pancetta and its rendered fat to the stove over medium heat. Add about 1/4 cup of the reserved pasta water to the pan. Immediately add the drained spaghetti and toss quickly for a few seconds, allowing most of the added water to evaporate and the pasta to absorb some of the rich flavors.

Crucially, remove the pan from the heat entirely. Quickly pour in the egg and cheese mixture. Stir vigorously and continuously, tossing the spaghetti to ensure the eggs emulsify with the residual heat and pancetta fat to create a creamy sauce, without scrambling. If the sauce seems too thick, add a tiny splash more of the reserved pasta water, a tablespoon at a time, until you reach your desired consistency.

Taste and season with additional salt and plenty of freshly cracked black pepper, if needed. Serve your authentic Spaghetti alla Carbonara immediately, garnished with extra grated cheese and pepper. Enjoy the rich, comforting flavors of Italy!
