  • 1/2 tablespoon olive oil
  • 1 lb hot Italian sausage
  • 1/2 yellow onion diced
  • 2 15 ounce cans pumpkin puree
  • ½ cup skim milk
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • 1 tsp salt
  • 1/2 tsp black pepper
Layers

  • 3 cups shredded mozzarella cheese divided (approximately 12 ounces)
  • 1 cup grated parmesan cheese divided

  • Fresh thyme leaves

instructions

  • Preheat the oven to 400˚F. Lightly spray a 9×13-inch baking pan with nonstick cooking spray.
  • Bring a large pot of salted water to a boil. Cook lasagna noodles for 5 to 6 minutes, then drain. Place the noodles flat on a couple baking sheets that have been sprayed with nonstick spray (or lined with Reynolds Wrap® Non-Stick Foil). This will prevent them from sticking to each other and make assembly much easier. While no-cook lasagna noodles are an option, I personally prefer the texture of pre-boiled noodles for this recipe.
  • In a medium skillet, heat olive oil for the pumpkin layer over medium-high heat. Add the hot Italian sausage and diced yellow onion, cooking and stirring occasionally until the sausage is beautifully browned and the onion is softened, approximately 5 minutes. Be sure to thoroughly drain out any excess liquid or grease; this step is crucial for the lasagna’s texture. Transfer the cooked sausage and onion to a medium bowl and allow it to cool for a couple of minutes.
  • To the bowl with the sausage and onion, add the remaining pumpkin layer ingredients: pumpkin puree, skim milk, cinnamon, nutmeg, allspice, salt, and black pepper. Stir until everything is well combined and fragrant. Set this pumpkin mixture aside. In a separate medium bowl, combine all the ingredients for the ricotta mixture (part-skim ricotta, egg, garlic powder, dried thyme, dried oregano, cayenne pepper, salt, and black pepper) and stir until smooth and evenly mixed. Set this aside as well.
  • Now it’s time to assemble your magnificent lasagna! Start by spreading 1 ½ cups of the savory pumpkin mixture evenly on the bottom of your prepared 9×13-inch baking pan. Next, arrange 4 lasagna noodles vertically over the pumpkin base, with one additional noodle placed horizontally at the top to cover the entire layer. Carefully spread half of the creamy ricotta mixture over these noodles, ensuring it reaches the edges. Then, generously top the ricotta layer with ¾ cup of shredded mozzarella cheese.
  • On top of the mozzarella, spread another 1 ½ cups of the rich pumpkin mixture. Finish this layer by sprinkling ½ cup of grated Parmesan cheese over the pumpkin, adding another depth of flavor.
  • Repeat the layering process: place another layer of noodles, followed by the remaining ricotta mixture, and then another ¾ cup of shredded mozzarella. Top this with the remaining pumpkin mixture and the other ½ cup of Parmesan cheese. Finally, sprinkle the remaining 1 ½ cups of shredded mozzarella cheese evenly over the very top. At this point, if you plan to freeze the lasagna for later, stop here and refer to the freezer notes below!
  • If baking immediately, cover the pan securely with Reynolds Wrap® Heavy Duty Foil. Bake in the preheated 400˚F oven for 25 minutes. After this initial baking, carefully remove the foil and continue baking for another 15 to 20 minutes, or until the cheese on top is beautifully melted, bubbly, and lightly browned. Once out of the oven, allow the lasagna to cool for at least 15 minutes before cutting and serving. This resting period helps the layers set, making for cleaner slices.
