Ingredients

Vinaigrette

  • 2 Tbsp hot honey (store-bought or homemade)
  • 1 Tbsp champagne vinegar (or white wine vinegar)
  • 1 tsp Dijon mustard
  • 1 tsp finely minced shallot
  • Pinch of red pepper flakes (optional, for extra heat)
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 2 Tbsp extra virgin olive oil (high quality recommended)
  • Salt and pepper to taste (for final adjustment)
Salad

  • 3 ripe peaches (pitted and sliced, firm but juicy)
  • 8 oz burrata cheese (2 large balls or 4 small, brought to room temperature)
  • Flaky sea salt & freshly cracked black pepper (for seasoning the assembled salad)
  • 1/4 cup toasted pistachios (chopped or whole)
  • Drizzle of balsamic glaze (to finish)
  • Fresh basil leaves (torn or chopped, optional but highly recommended)
  • Crusty bread (for serving)

Instructions

  • In a small bowl, combine hot honey, champagne vinegar, Dijon mustard, finely minced shallot, red pepper flakes (if using), kosher salt, and freshly cracked black pepper. Whisk these ingredients thoroughly until well combined. Continue whisking continuously while slowly drizzling in the extra virgin olive oil to emulsify the dressing. Taste and adjust seasoning with more salt and pepper as needed to achieve a perfectly balanced flavor.
  • Add the sliced peaches to a large mixing bowl. Pour the prepared vinaigrette over the peaches and gently toss to ensure all slices are evenly coated. Handle peaches carefully to avoid bruising.
  • Arrange the dressed peaches on your chosen serving platter or individual plates, creating an attractive base for the salad.
  • Tear the room-temperature burrata into irregular pieces and scatter them artfully over the peaches. Ensure some of the creamy interior is visible.
