  • 1 Tbsp + 1 tsp salt
  • 2 tsp light brown sugar
  • 1 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper

  • 3 12- ounce cans light lager
  • 1/3 cup kosher salt plus more for sprinkling
  • 1/4 cup granulated sugar
  • 2 tablespoons hot sauce
  • 4 cloves garlic finely chopped
  • 1 tablespoon chili powder
  • 3 tsp onion powder
  • 1 tsp black peppercorns

  • In a large pot, combine ingredients for the beer brine, stirring until the sugar dissolves. Place the chicken in the brine and refrigerator overnight (or for at least 8 hours).
  • When ready to cook, heat grill to high.
