This is the inspiration behind my brand-new series, “Mastering Global Cooking.” Each month, we’ll dive deep into a different cuisine from around the globe, focusing on classic dishes that you can master right in your own kitchen. With every new cuisine and every recipe I try, I’ll be sharing the entire experience – both my triumphs and my humorous mishaps. You know I’m already an open book, so why start filtering now?

And don’t worry, for those who love my signature creative dishes, I’ll still be sprinkling in my crazy recipes in between our global explorations. I couldn’t possibly deny you those!

Kicking Off Our Global Culinary Adventure with Italy

So, which incredible cuisine did I choose to kick off this ambitious series? ITALIAN. Naturally! While some might call it a bit of a head start, given my time spent living in Rome and my undeniable obsession with pasta, I felt it was the perfect launchpad. Italian food, with its universal appeal and comforting familiarity, offers a wonderful entry point into the diverse world of international cooking. My goal is to master classic Italian recipes that I haven’t yet had the chance to make from scratch, truly understanding their foundations.

An Expert Guide to Italian Cuisine: Interview with Paula from bell’alimento

To launch our Italian month, I had the immense pleasure of interviewing the lovely and incredibly talented Paula from bell’alimento. Her blog is a treasure trove of authentic Italian recipes, and her passion for Italian food is truly infectious. Get ready to learn from the best!

To kick things off, please tell us a little about yourself and your blog:

I love to cook (obviously!) but I confess, I absolutely hate doing dishes – a common chef’s dilemma! I’m a self-proclaimed Nutella-holic, always ready for a spoonful (or two). If you ever meet me, you’ll quickly find out I’m a social butterfly; it’s genuinely hard to get me to stop talking once I get going! On the road, I have a quirky dislike for making left-hand turns, always seeking the scenic route or the simpler right. My heart truly belongs to all things Italian, and yes, I am completely fluent in Italian, thanks to my upbringing. As an Air Force brat, I had the incredible opportunity to travel extensively across the country and around the world – go Blue! I met my wonderful husband in college, and together we have three very active, awesome, and wonderfully rambunctious kids who keep life exciting.

How would you describe your cooking style?
My cooking style is all about being simple and satisfying. I believe that good food doesn’t need to be overly complicated. It should be approachable, comforting, and deeply flavorful, using fresh ingredients to create dishes that nourish both the body and the soul. My goal is always to make delicious meals without unnecessary fuss.

I have been a long-time follower of your blog, and I would say you are definitely an expert in Italian cuisine. In your opinion, what is so special about Italian food?
What’s NOT to love about pasta? : ) But beyond the sheer joy of pasta, Italian food is special because it’s rooted in fresh, high-quality, seasonal ingredients. It’s a cuisine that celebrates regional diversity, where each dish tells a story of its origin. It’s about simplicity, balance, and bringing people together around the table. It’s truly a culinary philosophy of “less is more,” allowing the natural flavors to shine.

Do you think Italian cooking is difficult to master?
As with anything worthwhile, practice makes perfect. I firmly believe that food should be fun, an act of love focused on feeding yourself and the people you care about. Don’t be intimidated! The worst-case scenario is that you might burn something and have to whip up a quick sandwich, but that’s part of the learning process. So, get in there, embrace the experience, and give it a go! Cooking should be an enjoyable exploration, not a stressful chore.

Are there any secrets to help master Italian cooking?
The undeniable secret to mastering Italian cooking lies in one crucial element: quality ingredients. Italians understand that the foundation of any great dish is the freshness and excellence of its components. Whether it’s ripe tomatoes, fragrant basil, robust olive oil, or authentic cheeses, starting with the best possible ingredients elevates a simple meal into something extraordinary. When your ingredients are top-notch, you don’t need to do much to make them sing.

I have to admit, I am having trouble narrowing down which recipes to highlight for the Italian section of this series – lasagna, gnocchi, tiramisu, ravioli, the list goes on and on! What are the top three dishes that you consider to be Italian staples?
That’s a tough choice, but if I had to pick the absolute top three Italian staples that truly represent the heart of the cuisine, they would be Pasta, Risotto, and Pizza! These three dishes showcase the incredible versatility of Italian cooking, from the endless forms of pasta and their sauces, to the creamy comfort of a perfectly executed risotto, and the beloved art of pizza, which has countless regional variations and toppings. They are foundational, satisfying, and universally adored.

If you had to choose, what would be your ultimate full course Italian meal?
Without a doubt, my all-time, hands-down favorite dish is Spaghetti alla Carbonara. It’s pure perfection in its simplicity and richness. To complete this ultimate Italian experience, I would absolutely top it off with a classic, creamy Tiramisu for dessert. And, of course, no Italian meal is truly complete without a beautiful, carefully selected wine to complement the flavors and enhance the dining experience.

Diving into Paula’s Favorite: Authentic Spaghetti alla Carbonara

Well, I simply had to take Paula up on her ultimate favorite dish recommendation! Her enthusiastic endorsement of Spaghetti alla Carbonara was all the motivation I needed. So, without further ado, let me share my experience in crafting this iconic Roman pasta dish, and present the recipe for a truly unforgettable Spaghetti alla Carbonara!

While traditional Carbonara famously calls for guanciale (cured pork jowl), I couldn’t track it down easily. However, I am fortunate enough to live close to a fantastic Italian market run by an incredible group of passionate folks. They not only helped me navigate my options but also guided me to pick a high-quality pancetta that, in their expert opinion, would yield an even better result than if I had sourced an inferior guanciale. What a fantastic way to begin preparing a new dish, with such encouraging and knowledgeable advice!

Armed with my premium pancetta, I searched high and low for an amazing, authentic Spaghetti alla Carbonara recipe. That’s when I stumbled upon this particular one from The Kitchn. What drew me in were the detailed explanations and the vibrant discussion in the comments and tweets about what truly defines an authentic Spaghetti alla Carbonara. I loved delving into the nuances and understanding the principles behind this seemingly simple dish. So, I committed to their method, and the results were simply glorious. It was soooo good.

Luckily, I happened to have a friend over when I first tested this recipe, providing the perfect opportunity for an unbiased taste test. I’m absolutely delighted to report that she went back for not just seconds, but thirds! That, to me, is the ultimate seal of approval for any recipe. The creamy, peppery sauce clinging to the al dente spaghetti, intertwined with the crispy pancetta, created a truly memorable meal.

Spaghetti alla Carbonara

A classic Italian dish that has simple quality ingredients and is so easy to master.

ingredients

  • 1 pound dry spaghetti
  • 4 fresh large eggs
  • 8 ounces pancetta cut into squares
  • 1/3 cup freshly grated Parmigiano-Reggiano
  • 1/2 cup freshly grated Pecorino
  • Freshly cracked black pepper
  • Sea salt

instructions

  • Fill a large pot with water and salt generously. Bring the water to a boil, add spaghetti and cook for approximately 8 to 10 minutes or until al dente. Reserve 1/2 cup of water, then drain the pasta.
  • While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and sauté for about 2 minutes, or until the meat is crispy. Remove from heat
  • In a small bowl,whisk the eggs and the cheeses to combine.
  • Return the pancetta pan to the stove over medium heat. Add in 1/4 cup of the reserved pasta water. Add the spaghetti and toss for a few seconds. Allow most of the water to evaporate.
  • Remove pan from heat and quickly stir in the egg mixture until it thickens. Work quickly to prevent the eggs from scrambling.
  • Season with salt and pepper and serve immediately.
