  • Make Crumble: In a small bowl, combine flour, 1/2 cup brown sugar, and 1/4 tsp kosher salt. Add 6 Tbsp room temperature unsalted butter. Use your fingers to break up the butter and combine with the flour mixture until small crumbs form. Set aside.
  • Adjust Oven Temp: Decrease the oven temperature to 300˚F (150˚C).
  • Make Filling (Cream Cheese): In a stand mixer fitted with a paddle attachment, beat the room temperature cream cheese, 2 Tbsp all-purpose flour, and a pinch of salt on medium-low speed for about 5 minutes until smooth and fluffy. Scrape down the sides of the bowl as needed.
  • Add Sugar & Spices: Gradually add 1 1/4 cups granulated sugar, beating until just combined. Mix in vanilla extract, 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, and 1/4 tsp ground nutmeg.
  • Incorporate Eggs: Beat in the 4 large room temperature eggs one at a time, mixing on low speed until just combined after each addition. Pour the cheesecake filling into the cooled graham cracker crust, smoothing the top.
  • Assemble: Evenly sprinkle the spiced apples over the cheesecake filling. Top with the prepared crumble topping in an even layer.
  • Bake: Bake for 55 to 65 minutes. The edges should be set, but the center should still jiggle slightly like Jell-O when gently shaken.
  • Cool & Chill: Turn off the oven and prop the door open slightly, allowing the cheesecake to cool slowly inside for 1 hour. Then, remove to a wire rack to cool completely to room temperature. Once cool, transfer to the refrigerator and chill for at least 8 hours, or up to 3 days, to set completely.
  • Serve: Carefully remove the springform pan sides. Drizzle with salted caramel sauce just before slicing and serving. Enjoy!
