Freezing:

We do not recommend freezing Caprese Bruschetta or its tomato-mozzarella mixture. Tomatoes, due to their high water content, do not freeze and thaw well for use in fresh dishes like bruschetta. Upon thawing, they become watery and mushy, losing their desirable texture and vibrant flavor. The mozzarella and fresh basil would also suffer significantly from the freezing process, resulting in a less-than-ideal texture and taste. This dish is truly meant to be savored fresh!

Ingredients

  • 1 lb ripe tomatoes (hot house, tomatoes on the vine, heirloom, etc.)
  • 1/2 tsp kosher salt
  • 1/4 cup high quality extra-virgin olive oil
  • 4 cloves garlic (minced)
  • 1/2 tsp red pepper flakes
  • 1/3 cup mozzarella pearls
  • 1/3 cup thinly sliced fresh basil
  • Freshly ground black pepper
  • 1 to 2 Tbsp balsamic glaze
  • Crusty bread (sliced, either ciabatta or French baguette recommended)

Instructions

  • Preheat your oven to 350˚F (175˚C). Line a baking sheet with a silicone mat or parchment paper for easy cleanup.
  • Chop the ripe tomatoes into small, even pieces. Transfer them to a colander placed over your sink or a bowl to catch the liquid. Sprinkle with 1/2 tsp kosher salt and toss gently to combine. Let the tomatoes stand for about 20 minutes to drain excess moisture.
  • While tomatoes drain, add the extra-virgin olive oil, minced garlic, and red pepper flakes to a small skillet. Heat over medium-low heat. Cook for about 2 minutes, stirring occasionally, until the garlic is fragrant and lightly browned. Remove from heat and allow the infused oil to cool slightly.
  • Brush both sides of your sliced crusty bread lightly with the cooled garlic oil. Arrange the slices on the prepared baking sheet. Bake for 8 minutes total, flipping them halfway through, until they are golden brown and perfectly toasted.
  • In a mixing bowl, combine the thoroughly drained tomatoes with the mozzarella pearls, thinly sliced fresh basil, and the remaining garlic oil from the skillet. Toss gently to combine all ingredients. Season with additional salt and freshly ground black pepper to taste.
  • Spoon a generous amount of the vibrant Caprese mixture over each warm, toasted bread slice. Finish with a beautiful drizzle of balsamic glaze just before serving. Enjoy your fresh Caprese Bruschetta immediately!
