Strawberry Mint Champagne Galette Recipe
Ingredients
- 1 1/2 cups Bob’s Red Mill Organic All Purpose Unbleached White Flour
- 1 1/2 tsp granulated sugar
- 1/4 tsp salt
- 8 Tbsp cold unsalted butter cubed into 1/2” pieces
- 1/3 cup ice water
- 1/2 cup champagne (or sparkling wine)
- Juice of 1/2 a lemon
- 1/2 cup granulated sugar
- 1/4 tsp vanilla extract
- 12-14 fresh mint leaves
- 16 oz fresh strawberries diced
- 16 oz fresh strawberries sliced
- 2 Tbsp melted butter
- Turbinado sugar
- Fresh chopped mint leaves (for garnish)
Instructions

Prepare the Strawberry Mint Champagne Jam: In a medium saucepan, combine the diced strawberries, champagne, lemon juice, granulated sugar, vanilla extract, and mint leaves. Cook this mixture over medium-high heat, stirring gently until it reaches a boil. Once boiling, reduce the heat to medium-low and allow it to simmer for approximately 1 hour, stirring occasionally to prevent sticking. The jam should thicken to a spreadable consistency. Remove from heat and carefully transfer the jam to a blender or food processor. Puree until completely smooth. Set aside to cool slightly.

Make the Galette Crust: While your jam is simmering, begin preparing the galette dough. In a large mixing bowl, thoroughly whisk together the flour, sugar, and salt. Add half of the cold, cubed butter to the flour mixture. Using your fingertips, work the butter into the flour, squeezing the cubes until the mixture resembles a coarse meal. Now, add the remaining butter, and continue squeezing and working it into the flour until the largest pieces of butter are roughly the size of a small pea. Gradually drizzle the ice water over the dough, adding a little at a time and bringing the dough together by kneading it 3 to 4 times. Note: The amount of water needed can vary based on humidity and your local climate, so add just enough until the dough comes together without being overly sticky. Flatten the dough into a disk, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes to chill and firm up.

Preheat Oven & Prepare Baking Sheet: When you’re ready to bake your galette, preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper to prevent sticking and make cleanup easier.

Assemble the Galette: On a lightly floured surface, roll out the chilled galette dough into a rough 14-inch round. Carefully transfer the dough to your prepared baking sheet. Spread about 1/4 cup of the homemade strawberry mint champagne jam evenly over the center of the dough, leaving a generous 1 to 2-inch border clean all the way around the edge. Arrange the sliced fresh strawberries decoratively over the jam.
