  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 cup creamy peanut butter

  • 1 1/2 tsp vanilla extract
  • 3/4 cup milk
  • 1 cup strawberry jelly you can also use grape or raspberry!

  • Preheat oven to 350 degrees F (175 C). Spray a loaf pan with non-stick cooking spray.
  • Combine the all-purpose flour, baking powder, and salt in a medium bowl. Whisk until well combined.
  • In the bowl of a stand mixer (or using a hand mixer), beat the granulated sugar, brown sugar, vegetable oil, and creamy peanut butter until smooth and creamy. Add the egg and vanilla extract and mix until they are just incorporated.
  • Mix in half of the flour mixture, beating until just combined. Then add the milk and beat until combined. Add in the rest of the flour mixture and beat until the flour is incorporated and no dry streaks remain. Be careful not to overmix. Pour the bread batter into the greased loaf pan.
  • Add drops of the jam (strawberry, grape, or raspberry) to the top of the batter in the pan. Take a knife and gently swirl the jelly on top to create beautiful ribbons (this will make a yummy jelly topping!).
