A Burst of Flavor: Tequila Lime Pulled Pork and Grilled Tomatillo Salsa

This pulled pork flatbread is absolutely bursting with incredible flavors, each component playing a crucial role in its overall deliciousness. It starts with my renowned Tequila Lime Pulled Pork recipe, a true star in its own right. This slow-cooked pork is infused with a zesty, boozy lime flavor – don’t worry, the alcohol cooks out completely, making it perfectly safe and delicious for all ages. The beauty of this pulled pork is its versatility; while a generous portion is used for this flatbread, you’ll likely have leftovers, perfect for transforming into mouthwatering tacos, enchiladas, or sandwiches the very next day, saving you time and effort.

Preparing the Grilled Tomatillo Salsa for the Avocado Pulled Pork Flatbread.

The tender, flavor-packed pulled pork finds its perfect match in the homemade grilled tomatillo salsa. Grilling the tomatillos and jalapeños before blending them adds an incredible depth of smoky, charred notes that you simply can’t achieve with raw ingredients. This quick and easy salsa is bright, tangy, and boasts just the right amount of heat, creating an irresistible foundation for the flatbread. It’s a fresh, vibrant contrast to the rich pork, setting the stage for an unparalleled taste experience.

Assembling the Avocado Pulled Pork Flatbread with all its delicious toppings.

Beyond the core components, the toppings are thoughtfully selected to add layers of texture and flavor. Each bite delivers a refreshing burst from crisp red onion and the vibrant tang of fresh pico de gallo. These elements cut through the richness of the pork and cheese, adding essential brightness. And what’s a flatbread without cheese? A combination of Monterey Jack and Pepper Jack cheeses creates the ideal gooey, melted topping. Monterey Jack offers a mild, creamy base, while Pepper Jack introduces a gentle, spicy warmth that beautifully complements the smoky salsa and the zesty pork. This cheesy blend binds all the elements together on the perfectly golden-baked crust, ensuring every slice is cohesive and utterly satisfying.

Finally, the crowning glory: generous chunks of creamy avocado. The cool, smooth texture and buttery flavor of the avocado provide a delightful contrast to the heat of the salsa and the richness of the pork, tying all the diverse flavors into a harmonious whole. A final sprinkle of fresh cilantro adds a bright, herbaceous finish, elevating the entire dish.

This Avocado Pulled Pork Flatbread is an absolute crowd-pleaser, perfect for a casual dinner party or a fun family night. Personally, I love to pair it with some cold, bright Mexican lagers or a pitcher of tangy margaritas for the ultimate festive meal. But even if you’re just enjoying a quiet evening at home, this flatbread guarantees a party in your mouth with every single bite.

Essential Tools for Crafting This Flatbread

Having the right kitchen tools can make all the difference in achieving perfect results with any recipe, and this pulled pork flatbread is no exception. To ensure your crust bakes evenly and crisps beautifully, I highly recommend using a sturdy half sheet baking pan. It provides ample space for your flatbread dough to spread out and cook thoroughly.

For preparing all those fresh, vibrant toppings – from dicing the avocado to slicing the red onion and mincing garlic – a sharp chef’s knife is an indispensable tool. A high-quality knife not only makes prep work faster and safer but also lasts for years, becoming a trusted companion in your kitchen. Pair it with a reliable cutting board for stability and hygiene. These are the kinds of kitchen essentials that truly streamline the cooking process and contribute to a more enjoyable culinary experience.

And when it comes to serving, forget fumbling with a traditional pizza slicer that might scratch your pan or serving platter. I’ve found that a good pair of pizza scissors is a game-changer for easily cutting neat, clean slices of flatbread. They’re precise, efficient, and make serving a breeze.

equipment

  • Stainless Steel Mixing Bowls
  • Shun Classic Western Chef’s Knife, 8-Inch
  • Traeger Lil Tex Elite 34 Pellet Grill

ingredients

Tomatillo Salsa:

  • 1/3 lb Tomatillo husked and rinsed
  • 1 small Jalapeño halved and seeded
  • 2 cloves Garlic diced
  • Juice from half a Lime
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
Pizza:

  • 1 lb Pizza Dough
  • 2 1/2 cups Tequila Lime Pulled Pork
  • 1/2 Red Onion thinly sliced
  • 1/2 cup Shredded Pepper Jack Cheese
  • 1/2 cup Shredded Mozzarella Cheese
  • 2 Avocados peeled, pitted, and diced
  • 1/2 cup pico de gallo

instructions

  • Preheat grill to medium-high heat. Preheat oven to 375˚F.
  • Once the grill is hot, add tomatillos and jalapeño. Cook, turning occasionally, until nicely charred and softened, about 10-12 minutes.
  • Transfer the grilled jalapeño to a ziploc bag and seal. Let rest for 10 minutes to steam, which makes peeling easier. Remove skin, stem, and seeds, then finely dice.
  • Combine the grilled tomatillos, diced jalapeño, and other salsa ingredients (diced garlic, lime juice, salt, and black pepper) in a food processor or high-power blender. Process until smooth. Pour into a large bowl and taste, adjusting seasoning with additional salt and pepper as desired.
  • Add the prepared tequila lime pulled pork to the tomatillo salsa and stir thoroughly to ensure the pork is well coated with the vibrant sauce. Set aside.
  • On a clean, lightly floured work surface, roll out the pizza dough into your desired flatbread shape (a rectangle works well for baking sheets). Carefully transfer the dough to a baking sheet. Bake in the preheated oven according to the package instructions until lightly golden and par-baked (typically around 10-15 minutes).
  • Remove the par-baked crust from the oven. Evenly spread the sauced pulled pork mixture over the crust, then scatter the thinly sliced red onion and both shredded cheeses (Pepper Jack and Mozzarella) on top. Return the flatbread to the oven and continue baking until the cheese is beautifully melted and bubbly, about 5-7 minutes.
  • Once baked, carefully remove the flatbread from the oven and transfer it to a serving platter or large cutting board. Generously top with the diced avocado and fresh pico de gallo. For an extra touch of freshness, sprinkle with chopped cilantro.
  • Slice the flatbread into individual portions using a sharp knife or pizza scissors and serve immediately while warm. Enjoy this extraordinary Mexican-inspired culinary delight!
