The Universal Struggle: The Perfect Lunch

I don’t know about you, but for many, one of life’s persistent culinary challenges is undoubtedly LUNCH. It’s a daily balancing act, isn’t it? We strive to find that elusive sweet spot between something hearty enough to keep hunger at bay, yet light enough to prevent the dreaded post-lunch food coma. You want a meal that energizes you, not one that makes you want to curl up for a nap. Crafting a lunch that is both satisfying and healthy, one that keeps you feeling full and focused until dinner rolls around, can indeed be a bit of a difficult feat to pull off consistently. That’s where many pre-packaged options fall short, often leaving us either still hungry or feeling sluggish.

The Magical Core: Tender Korean BBQ Pork

The true magic of this recipe begins with the star ingredient: the incredibly tender and juicy Korean BBQ pork. What makes this even better is how wonderfully simple it is to prepare. You have the flexibility to cook it to perfection in either your trusty pressure cooker for speed or your beloved slow cooker for a hands-off approach. This low-maintenance cooking method makes it ideal for busy schedules. I personally love making a generous batch of this Korean BBQ pork on a Sunday evening. This way, it’s ready to be enjoyed throughout the entire week, simplifying meal prep significantly. However, if spontaneity strikes, you can absolutely whip it up the morning of your lunch, or even the night before, for fresh, flavorful results. The pork, simmering in its savory sauce, becomes incredibly tender, easily shreddable, and infused with that distinctive sweet, salty, and umami Korean BBQ flavor that we all adore.

The Zesty Counterpoint: Kimchi Slaw

Next up is the star’s perfect partner: the vibrant kimchi slaw. This isn’t just any slaw; it’s a tart and tangy burst of freshness that, in my humble opinion, should make an appearance on every sandwich, wrap, or taco ever created. It provides that essential textural contrast and a flavor profile that cuts through the richness of the pork beautifully. The slaw is a delightful combination of crunchy, slightly sour, and boasts just the right hint of sweet to expertly balance out the strong, fermented flavor of the kimchi. Kimchi, a staple in Korean cuisine, is not only incredibly flavorful but also packed with probiotics, adding a healthy boost to your meal. The fresh coleslaw mix adds a satisfying crunch, while the mayonnaise and sugar bring a creamy, slightly sweet element that ties all the flavors together harmoniously.

For a truly unexpected and refreshing crunch, you should also try adding this versatile kimchi slaw to your next grilled cheese sandwich! It’s a game-changer.

ingredients

Pork

  • 2 lbs boneless pork loin or shoulder
  • 1 1/2 cups vegetable stock
  • 2 Tbsp rice vinegar
Korean BBQ Sauce

  • 1/2 cup hoison sauce
  • 1 Tbsp dijon mustard
  • 2 1/2 Tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 Tbsp rice vinegar
  • 1 tsp garlic powder
  • 1 1/2 tsp Sriracha
Kimchi Slaw

  • 1 cups fresh coleslaw mix
  • 1/2 cups kimchi cut into long thin strips
  • 1 1/2 Tbsp mayonnaise
  • 1/2 tsp sugar
  • 1 tsp freshly chopped cilantro
  • Salt and pepper
Wraps

  • Thinly sliced red onion
  • 4 Flatout Flatbread Light Original Wraps

instructions

  • In a pressure cooker, combine pork, vegetable stock and rice vinegar. Secure the lid and cook under pressure for 1 hour. Once cooking is complete, carefully release the pressure according to your cooker’s instructions. Remove the tender pork from the pot and transfer it to a large bowl. Using two forks, shred the pork until it’s finely pulled apart. Set this delicious shredded pork aside.
  • While the pork is cooking or cooling, prepare your flavorful Korean BBQ sauce. In a medium bowl, whisk together the hoisin sauce, dijon mustard, soy sauce, sesame oil, rice vinegar, garlic powder, and Sriracha until the mixture is smooth and well combined. Add this vibrant sauce to the shredded pork and stir thoroughly, ensuring every piece of pork is beautifully coated in the rich, glossy sauce. Set aside to allow the flavors to meld.
  • Now, for the essential kimchi slaw! In a separate, clean medium bowl, combine the fresh coleslaw mix, the cut kimchi strips, mayonnaise, sugar, and freshly chopped cilantro. Stir all the ingredients together until they are evenly distributed. Taste the slaw and season with salt and freshly ground black pepper to your preference. This slaw can be made a few hours ahead of time to allow the flavors to develop even further. Set aside.
  • To assemble these magnificent wraps, lay one Flatout Flatbread Light Original Wrap on a clean, flat work surface. Spoon approximately 1/4 cup of the prepared kimchi slaw onto the bottom third of the wrap, making sure to leave a small border on either side for easy folding. Next, generously top the slaw with about 1/3 cup of the flavorful shredded Korean BBQ pork. Finish with a thin, even layer of thinly sliced red onion for an extra layer of crunch and pungent flavor.
  • Carefully and tightly roll the wrap away from you, starting from the bottom, until you reach about halfway up. At this point, fold in both sides of the flatbread to create a neat, enclosed package. Continue rolling tightly until the wrap is fully sealed. Slice the finished wrap in half, creating two perfectly portioned halves. Serve immediately to enjoy the peak freshness and flavor of all the components. Repeat with the remaining wraps and fillings.

notes

Note: For those who prefer a more leisurely cooking approach, you can also use a slow cooker to prepare the pork. Simply combine the same pork ingredients (pork loin or shoulder, vegetable stock, and rice vinegar) in your slow cooker and cook on high for 4 to 6 hours, or on low for 8 hours, until the pork is incredibly tender and easily shreddable. Adjust cooking times based on your specific slow cooker and pork cut.
