Ingredients

  • 10 oz cherry tomatoes
  • 1 head garlic
  • 2 Tbsp olive oil
  • 11 oz mozzarella cheese shredded
  • 8 oz provolone cheese shredded
  • 1/4 cup freshly grated parmesan cheese
  • 4 oz havarti cheese shredded
  • 12 oz cream cheese room temperature
  • 1 Tbsp fresh oregano chopped*
  • 1/4 cup fresh basil chopped**
  • 1/2 tsp onion powder
  • Pinch of red pepper flakes

Instructions

  • Preheat the oven to 400˚F. Line a rimmed baking sheet with silicone mat or parchment paper.
  • Peel garlic cloves and add to the prepared baking sheet with halved tomatoes. Drizzle olive oil over the garlic and tomatoes, then gently toss the tomatoes and garlic until coated. Season with salt and pepper to taste.
  • Roast the garlic and tomato together for 20 to 25 minutes, until the tomatoes have burst and garlic is softened. Remove from oven and set aside.
  • Add 8 oz mozzarella with all of the provolone, parmesan, havarti, and cream cheese in a large bowl. Stir to combine.
  • Once the garlic has cooled, smash each clove with the back of a fork until it is more of a paste. Add the garlic and tomatoes to the bowl of cheeses along with the fresh herbs, onion powder, and pinch of red pepper flakes. Season with salt and pepper to taste. Stir to combine.
  • Add the cheese mixture to an oven safe dish (about 1 1/2 quarts in size). Sprinkle the top with the remaining mozzarella cheese in an even layer.
