  • 1 yellow onion quartered and separated
  • 1 1/2 cups fresh pineapple chunks
Creamy Jalapeño Sauce

  • 1 to 2 jalapeños roasted on the sheet pan with other ingredients; use 2 for spicier sauce!
  • 1/2 cup plain greek yogurt
  • Juice of 1 lime
  • 1 tsp honey
  • 1/4 tsp smoked paprika
  • 1/4 cup fresh cilantro leaves
For Serving (Tacos)

  • 12 corn or flour tortillas warmed
  • lime wedges for garnish

  • Preheat Oven: Preheat your oven to 425˚F (220˚C).

Toss well to ensure the chicken is evenly coated. Arrange the seasoned chicken in a single layer on one half of a large rimmed sheet pan.
  • Add Veggies and Pineapple: On the other half of the same sheet pan, add the sliced poblano or anaheim pepper, quartered yellow onion, fresh pineapple chunks, and the whole jalapeños (for the sauce).
  • Roast: Transfer the sheet pan to the preheated oven and roast for 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165˚F (74˚C). Remove the chicken from the sheet pan and set it aside on a cutting board to rest.
