Embracing the Last Flavors of Summer
Even as September approaches, signaling the transition to a new season, the spirit of summer often lingers. Sunny skies and lingering warmth mean that many gardens are still bursting with a spectacular array of colorful vegetables. While I aspire to a thriving home garden, my first attempt this year was, shall we say, a learning experience! Thankfully, local farmers’ markets are still overflowing with the delicious bounty of summer, making it easy for everyone to access the freshest produce.

Why a Vegetable Hummus Board is Your Go-To Summer Appetizer
No matter if your vegetables come from your own backyard or a bustling farmers’ market, these final warm days of summer deserve a proper send-off. And what better way to pay homage to the season’s incredible produce than with a vibrant, flavorful, and incredibly easy vegetable hummus board?
We’re all familiar with classic meat and cheese boards, or the sweet simplicity of cheese and fruit platters. But a vegetable hummus board truly stands out as a healthy, fresh, and utterly satisfying way to graze. Just imagine the explosion of color and fresh aromas – it’s an experience for all the senses! If you’ve been searching for a healthy, fuss-free snacking or entertaining option, this “set-it-and-forget-it” recipe is about to become your new secret weapon.

Forget the pre-packaged veggie trays from the grocery store. This board encourages you to explore and connect with your food. Take a trip to your local farmers’ market, or simply harvest from your garden. Seek out the freshest summer vegetables you can find. The magic of this board lies in maximizing their natural flavors by offering both raw and roasted preparations. This dual approach provides a fantastic contrast in both taste and texture, elevating a simple vegetable platter into something truly special.
The Art of Pairing Textures: Raw vs. Roasted
For this particular hummus board, I focused on a delightful combination of textures. I roasted zucchini, yellow squash, and grape tomatoes. Roasting brings out their inherent sweetness, softens their texture, and concentrates their flavors, making them wonderfully succulent and easy to dip into creamy hummus. These vegetables, when roasted until just fork-tender, offer a warm, comforting element to the board.
To complement the roasted selections, I included crisp bell peppers (green and orange for visual appeal and varied flavor notes), refreshing cucumber slices, and vibrant raw cherry tomatoes. These raw additions provide a satisfying crunch and a burst of fresh, juicy flavor, creating an exciting textural and taste contrast that keeps every bite interesting. The interplay between the tender roasted items and the crisp raw ones is truly what makes this board shine.

Choosing Your Hummus: A Flavor Foundation
To truly elevate this summer vegetable bounty, the choice of hummus is paramount. I opted for two of my favorite Sabra hummus flavors, each bringing its unique character to the board. The Sabra Roasted Pine Nut Hummus offers a wonderfully nutty and herbaceous profile, which pairs exquisitely with the crisp bell peppers and cool cucumber. Its sophisticated flavor adds an extra layer of depth to the fresh vegetables.
Alongside, the Sabra Roasted Red Pepper Hummus is a true crowd-pleaser and, in my opinion, a perfect match for every single item on this generous summer board. Its sweet and smoky notes enhance both the raw and roasted vegetables, providing a versatile and universally appealing dipping option. The beauty of a hummus board is its adaptability; feel free to experiment with your own favorite Sabra flavors or even create a trio for even more variety!

Tips for Building Your Perfect Hummus Board
Creating a beautiful and delicious hummus board is incredibly simple. Here are a few tips to ensure yours is a masterpiece:
- Variety is Key: Aim for a wide range of colors, textures, and flavors. Think beyond common vegetables – consider radishes, snap peas, blanched green beans, or even fruit like grapes for a touch of sweetness.
- Preparation Matters: Cut your vegetables into dippable sizes. Sticks, rounds, florets – make them easy to pick up and enjoy.
- Strategic Placement: Arrange your hummus in small bowls strategically across the board. Then, fan out your vegetables around them. Alternate colors and textures to create an inviting visual display.
- Add a Garnish: A sprinkle of fresh herbs (parsley, dill, mint), a drizzle of good quality olive oil, or a scattering of toasted seeds can add a final flourish and extra flavor.
- Don’t Forget the Dippers: While vegetables are the star, pita wedges are essential for scooping up all that delicious hummus. Other great options include crackers, tortilla chips, or crusty bread.
- Temperature Contrast: Serving some vegetables warm (the roasted ones) and others chilled (the raw ones) adds another layer of sensory pleasure to the experience.
So, go ahead and gather up as much of those incredible summer vegetables as you can get your hands on. Before you know it, the weather will be cooling off, and you’ll have to say “so long, farewell” to many of your summer favorites. This hummus board is the perfect way to savor every last moment.

Essential Tools for Your Hummus Board Masterpiece
Having the right tools can make the preparation of your hummus board even more enjoyable and efficient. Here are a few “must-haves” that will streamline your chopping, roasting, and serving process, ensuring a beautiful presentation every time:
- A simple yet sturdy Large Canadian Maple Cutting Board is indispensable. Its generous surface area provides ample space for preparing all your vibrant vegetables, making chopping and slicing a breeze. A quality cutting board not only protects your countertops but also provides a stable surface for precise cuts.
- Pairing your cutting board with one of my favorite knives, the Shun Kanso 7-Inch Hollow-Ground Santoku Knife, will make all the necessary slicing and dicing for this board incredibly easy. A sharp, well-balanced knife significantly reduces prep time and ensures clean cuts, which are crucial for beautifully presented vegetables.
- For roasting your grape tomatoes, zucchini, and squash, a Nordic Ware Natural Aluminum Commercial Baker’s Half Sheet Set is ideal. These durable baking sheets distribute heat evenly, ensuring your vegetables roast perfectly to that desired tender-crisp texture, with just the right amount of caramelization.
- Speaking of roasting, I always, ALWAYS use my Silpat Premium Silicone Baking Mats – even for savory roasting! These non-stick mats are a game-changer. They work beautifully to prevent sticking, last an incredibly long time, and significantly reduce the need for parchment paper or aluminum foil. This makes cleanup a breeze and is a more sustainable choice for protecting your baking sheets.

30 minutes
Ingredients
- 1 cup grape tomatoes
- 1 tsp olive oil
- 1 zucchini cut into sticks (approx. 1/2-inch wide x 2 to 3 inches long)
- 1 yellow squash cut into sticks (approx. 1/2-inch wide x 2 to 3 inches long)
- Salt and pepper to taste
- 1 green bell pepper sliced into strips or rings
- 1 orange bell pepper sliced into strips or rings
- 1/2 cup raw cherry tomatoes
- 1 cucumber cut into 1/4-inch rounds
- Sabra Roasted Pine Nut Hummus or your preferred flavor
- Sabra Roasted Red Pepper Hummus or another complementary flavor
- Your favorite pita cut into wedges, ideal for dipping
Instructions
-
Preheat your oven to 400 degrees F (200 degrees C). This ensures the oven is at the correct temperature for even roasting.
-
In a large mixing bowl, combine the grape tomatoes, zucchini sticks, and yellow squash sticks. Drizzle them with 1 teaspoon of olive oil and toss gently to ensure all the vegetables are evenly coated. A light coating of oil helps them roast beautifully and prevents sticking.
-
Spread the olive-oil coated vegetables in a single layer on a rimmed baking sheet. For best results and easy cleanup, line your baking sheet with a silicone mat or aluminum foil. Season generously with salt and freshly ground black pepper to enhance their natural flavors.
-
Bake the vegetables for approximately 20 minutes, or until the squash and zucchini are tender when pierced with a fork. The grape tomatoes should appear slightly wrinkled and softened, but not entirely burst, retaining some of their juicy integrity.
-
Once the roasted vegetables are slightly cooled, it’s time for assembly! Artfully arrange the warm roasted vegetables, the crisp raw vegetables, pita wedges, and the two delicious Sabra hummus flavors onto a large platter or cutting board. Presenting them beautifully makes the board even more inviting.
