Crispy Cheese Croquettes

These delightful homemade cheese croquettes feature a rich, gooey cheese filling enveloped in a perfectly crispy, golden-brown exterior. They are an irresistible bite-sized appetizer, reminiscent of a classic Belgian snack, guaranteed to be a hit at any gathering or as a comforting treat.

Ingredients

For the Cheese Filling:

  • 3 Tbsp unsalted butter
  • 1/2 cup all purpose flour
  • 2/3 cup milk full fat recommended for richness
  • 2 egg yolks
  • 1 1/2 cups shredded cheese mozzarella, Gruyère, Swiss, or a blend
  • 1/2 tsp salt or to taste
  • Freshly ground black pepper to taste (optional)
For Dredging and Frying:

  • 1 large egg beaten
  • 1/4 cup milk
  • 1/3 cup all purpose flour
  • 1 cup fine breadcrumbs or panko breadcrumbs for extra crispiness
  • Vegetable oil for deep frying (approx. 3-4 inches in pan)
  • Flaky sea salt for garnish (optional)

Instructions

  • In a medium, heavy-bottomed saucepan over medium heat, melt the 3 Tbsp butter. Once melted, stir in the 1/2 cup flour until a paste (roux) forms and cooks for 1-2 minutes. Gradually whisk in 2/3 cup milk, followed by the 2 egg yolks, 1 1/2 cups shredded cheese, and 1/2 tsp salt. Continue to cook, stirring constantly, until the cheese has completely melted and the mixture has thickened considerably.
  • Pour the thick cheese mixture into a dish or bowl. Press plastic wrap directly onto the surface to prevent a skin from forming. Place in the refrigerator and chill for at least 6 hours, or ideally, overnight, until firm enough to handle.
  • Once chilled, scoop out approximately 1 to 1 1/2 Tablespoons of the cheese mixture at a time. Roll each portion gently between your hands to form uniform, smooth croquette balls. You should have approximately 12 balls total. Set them aside on a plate.
  • Set up your dredging station: In a small bowl, beat together 1 egg and 1/4 cup milk for the egg wash. In a separate shallow bowl, add the 1/3 cup all-purpose flour. In a third shallow bowl, add the 1 cup breadcrumbs.
  • In a heavy-bottomed pan or Dutch oven, heat approximately 3 to 4 inches of vegetable oil over medium-high heat until it reaches 350-375˚F (175-190°C). Use a kitchen thermometer to monitor the temperature accurately.
  • One by one, roll each croquette ball first in the flour (shaking off excess), then dip it completely into the egg wash (allowing excess to drip off), and finally coat it thoroughly in the breadcrumbs, pressing gently to ensure full coverage.
  • Carefully lower the coated croquettes into the hot oil in batches, ensuring not to overcrowd the pan (this helps maintain oil temperature and crispiness). Deep fry until they are golden brown and crispy on all sides, about 2 to 3 minutes per batch. Use a slotted spoon or spider to remove them. Drain the fried croquettes on a plate lined with paper towels. If desired, immediately sprinkle with flaky sea salt.
  • Serve the crispy cheese croquettes warm with your favorite dipping sauce.

Ingredients for Sauce:

2 cups balsamic vinegar

1/2 cup fresh or frozen berries (blackberries, raspberries, or mixed berries work wonderfully)
