  • Vitamix Blender
  • Large Mixing Bowl or Resealable Bag
  • Digital Meat Thermometer
  • Grill, Baking Sheet, or Large Skillet (depending on cooking method)

Ingredients

Marinade

  • 1 cup whole milk Greek yogurt
  • 1 tsp lemon zest
  • 1 Tbsp apple cider vinegar
  • 3 Tbsp olive oil (extra virgin recommended)
  • 5 cloves garlic, minced (fresh is best)
  • 1 shallot, peeled and quartered
  • 1 Tbsp sweet paprika
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp turmeric
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper (adjust to taste)

Chicken

  • 1 1/2 to 2 lbs skinless, boneless chicken thighs or chicken breast

Instructions

Marinade

  1. Add Greek yogurt, lemon zest, apple cider vinegar, olive oil, minced garlic, quartered shallot, sweet paprika, ground cumin, dried oregano, turmeric, salt, pepper, onion powder, and cayenne pepper to a food processor or high-speed blender. Puree until completely smooth.
  2. Place chicken thighs or chicken breast into a large bowl or resealable bag. Pour the prepared marinade over the chicken and stir to coat evenly. If using a bag, seal it and gently squish the chicken around to distribute the marinade thoroughly.
  3. Tightly cover the bowl with plastic wrap or ensure the bag is well-sealed. Marinate in the refrigerator for at least 2 hours, and for optimal flavor and tenderness, up to 12 hours.
  4. When ready to cook, remove the chicken from the refrigerator. Scrape off any excess marinade from the chicken and place the chicken on a clean plate. Discard the remaining marinade.

To Grill

  1. Preheat your grill to medium-high heat (approximately 450˚F / 230˚C).
  2. Lightly oil the grill grates with 1 to 2 tablespoons of a neutral vegetable oil to prevent sticking.
  3. Place the marinated chicken on the hot grill. Grill chicken thighs for 8 to 10 minutes total, flipping halfway through. For chicken breasts, grill for 10 to 14 minutes total, flipping halfway through. Ensure the chicken reaches an internal temperature of 165˚F (74˚C) using a digital meat thermometer.
  4. Transfer the cooked chicken to a cutting board and let it rest for 5 to 7 minutes before slicing or serving.

To Bake

  1. Preheat the oven to 425˚F (220˚C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Arrange the marinated chicken in a single layer on the prepared baking sheet, ensuring pieces do not overlap or touch, to allow for even cooking. Bake until the chicken reaches an internal temperature of 165˚F (74˚C). This will take approximately 18 to 20 minutes for chicken thighs and 20 to 25 minutes for chicken breasts.
  3. Remove from the oven and let the chicken rest for 5 minutes before serving.

To Pan Sear

  1. Heat 1 tablespoon of vegetable oil or avocado oil in a large skillet (cast iron works great) over medium-high heat. Once the oil is hot and shimmering, carefully place the chicken pieces in the skillet. Avoid overcrowding the pan; cook in batches if necessary.
  2. Cook chicken thighs for 10 to 12 minutes total, or chicken breasts for 12 to 15 minutes total, flipping halfway through, until golden brown and cooked through. Verify the internal temperature is 165˚F (74˚C) with a meat thermometer.
  3. Remove the chicken from the skillet and let it rest for 5 minutes before slicing and serving.
