Ingredients

  • 3 small russet potatoes, peeled and cut into thin slices
  • 2 cups heavy cream
  • 1 tsp freshly chopped thyme
  • 1 tsp freshly chopped oregano
  • 1 bay leaf
  • 1 1/2 tsp. kosher salt
  • 1/2 tsp black pepper
  • 4 oz. white cheddar cheese, shredded
  • 3 oz. Gruyère cheese, shredded
  • Freshly chopped parsley, for garnish

Instructions

  1. Preheat oven to 400 degrees F (200 C). Line a baking sheet with parchment paper. Set 4 mini cocottes on the baking sheet.
  2. Carefully divide the thinly sliced potato rounds evenly between the four mini cocottes. Layer them in a staggered, slightly overlapping circle, ensuring the slices lay as flat as possible for even cooking and a beautiful presentation.
  3. In a medium saucepan, combine the heavy cream, freshly chopped thyme, freshly chopped oregano, bay leaf, kosher salt, and black pepper. Place the saucepan over medium-high heat and bring the mixture to a gentle simmer, stirring occasionally. Once simmering, remove the pan from the heat. Carefully remove and discard the bay leaf.
  4. Stir 3 oz of the shredded white cheddar cheese and 2 oz of the shredded Gruyère cheese into the warm cream mixture. Continue stirring until both cheeses are completely melted and the sauce is smooth and creamy.
  5. Slowly and carefully pour the cheese and cream mixture over the layered potatoes in each of the 4 cocottes, dividing it evenly. Ensure that the potatoes are well-covered by the liquid.
  6. In a small separate bowl, combine the remaining 1 oz of white cheddar cheese and 1 oz of Gruyère cheese. Sprinkle this cheese mixture evenly over the top of each cocotte. This will create a beautiful golden crust.
  7. Place the baking sheet with the mini cocottes into the preheated oven. Bake for approximately 30 minutes, or until the potatoes are cooked through (test with a fork) and the top is golden brown and bubbling.
  8. Once baked, remove the baking sheet from the oven and let the individual potato gratins rest for 10 minutes before serving. This allows the gratin to set and prevents it from falling apart. Garnish each cocotte with fresh chopped parsley and serve immediately.
