- 1 1/2 cups fresh pineapple chunks
- 1 to 2 jalapeños I used 2 jalapenos because I like the sauce to be spicy!
- 1/2 cup plain greek yogurt
- Juice of 1 lime
- 1 tsp honey
- 1/4 tsp smoked paprika
- 1/4 cup cilantro leaves
- 12 corn or flour tortillas warmed
- lime wedges
- freshly chopped cilantro
Instructions

Preheat the oven to 425˚F (220°C).

In a medium bowl, combine the chicken thighs, olive oil, chopped chipotle chilies, salt, and pepper. Toss well to ensure the chicken is evenly coated. Arrange the seasoned chicken in a single layer on a rimmed sheet pan.
